A taste of Somerset in a scone

I used to be something of a purist when it came to scones. The whole scone experience was more about the indulgence of the clotted cream and jam, rather than the scone itself. If I was being slightly adventurous, I might throw a few sultanas into the scone mixture.
But since a) having children and b) becoming a food blogger, a new scone-shaped world has opened up to me, particularly the seemingly endless possibilities of the savoury scone.

Savoury scones are a perfect standby snack for little ones (and adults) and I often make them for the children’s lunchboxes too. Courgette and cheese scones are favourites, as are butternut squash and red onion.

Think of Somerset foods and Cheddar cheese and apples will no doubt come to mind. I know, I know – the produce of Somerset is so much more varied than this ubiquitous pairing, but you have to admit our apples and cheese are world-class. If you were at the Wells Food Festival back in September, you’ll have seen the crowds around the cheese stall; all due to the fine reputation of our local cheeses.

And what better to enjoy alongside your cheese than a crisp, flavourful apple. We are so lucky to have such a wonderful variety available to us here, although we should remember that more than 50 per cent of Somerset’s orchards have disappeared over the last 50 years. This is something a number of local growers and projects are working hard to turn around.

So, for a taste of Somerset in a scone, how about a tasty cheese and apple scone, using a mature local Cheddar and a generous sprinkling of fresh sage? They’re perfect cold in your packed lunch but even better served warm from the oven, with a little salted butter and some extra slices of cheese or maybe some cold meats.

Cheddar cheese, apple and sage scones

Makes around 12

300g self-raising Flour
½ tsp baking powder
75g butter
125g mature Cheddar, grated
handful of fresh sage leaves, finely chopped
1 large eating apple, cored and grated
1 medium free range egg, lightly beaten
150ml milk

Preheat the oven to 200ºC / gas mark 6.

Grease a large baking sheet and cover with baking parchment.

Pour the flour and baking powder into a large bowl and mix together. Chop the butter into cubes and rub it into the flour using your finger tips until it resembles breadcrumbs.

Stir two-thirds of the cheese into the mixture, along with the sage and apple.

Make a well in the middle of the mixture and pour in the beaten egg and milk. Use a knife to bring together into a soft dough. If it is too wet, add a little more flour.

Lightly flour the work top. Roll out the dough to a 2cm thickness and use a pastry cutter to cut out your scones. Keep re-rolling the dough until it is all used up.

Place the scones on the baking sheet spaced well apart. Sprinkle the scones with the remaining grated cheese and bake for around 15 minutes until golden.

Transfer to a wire rack to cool a little before eating.

Chilli beef pie with spicy potato wedges

This chilli beef ticks all the right boxes for me. It’s a proper winter warmer, pretty much all cooked in one pot. The beef is slow cooked so it practically falls apart in your mouth and is flavoured with delicious cumin, chilli, cinnamon and oregano. It’s topped off with crispy, spicy potato wedges. Oh and it’s got melted cheese on top too. Really, what’s not to like?

It’s the first dish I’ve tried from the Higgidy Cookbook and I’m now looking forward to working my way through the rest of the book. The lamb shank pie is another I’ve got my eye on.

Chilli beef pie with spicy potato wedges

Serves 6

2 tsp cumin seeds
1 tsp dried chilli flakes
1 tsp ground cinnamon
2 tsp dried oregano
750g braising beef, cut into chunks
3 tbsp olive oil
2 onions, finely chopped
3 garlic cloves, finely chopped
1 small bunch fresh coriander, leaves and stalks separated and chopped
2 green chillies, chopped
2 tbsp tomato puree
400ml beef stock
1 x 400g tin chopped tomatoes
2 tbsp black treacle
1 red pepper, deseeded and diced
1 x 400g tin black beans, drained and rinsed
salt and pepper

For the wedges

4 large baking potatoes
2 tbsp olive oil
good pinch of smoked paprika
large handful of grated Cheddar cheese

Preheat the oven to 180°C / gas mark 4.

Crush the cumin seeds and chilli flakes in a pestle and mortar and then pour into a large bowl. Stir in the cinnamon, oregano and 1 teaspoonful of salt. Add the chunks of beef and toss well to completely coat the meat.

Place your casserole dish over a medium heat and add a tablespoonful of the oil. Brown the beef all over in batches. Don’t let the spices burn or they will turn bitter. Put the browned meat in a bowl.

Pour a little water into the pan, scrape the bottom with a wooden spoon to loosen all those lovely tasty bits, and then pour this over the beef.

In the same pan, heat the rest of the oil and then gently fry the onion, garlic, coriander stalks (reserve the leaves) and chillies until soft. Add the puree, stock, tomatoes and hot stock, and give it all a good stir. Cook for a minute or two.

Add the beef and bring to the boil. When the stew comes to the boil, remove from the heat and cover tightly with the lid. Cook in the oven for two hours.

Add the pepper and black beans, stir well, season with salt and pepper to taste, and then return to the oven with the lid back on for another 20 minutes. Remove from the oven and stir in the coriander leaves. Keep to one side with the lid on to keep warm.

Increase the oven to 200°C / gas mark 6.

Cut the potatoes into chunky wedges and boil in salted water for around 8 minutes until just tender. Drain well and put into a roasting tin. Drizzle with the oil and sprinkle with paprika and salt and bake for half an hour until crisp and golden.

Preheat the grill to medium-high.

Scatter the wedges over the top of the stew, top with grated cheese and pop it under the grill until the cheese has melted.

Serve with soured cream. Enjoy!

Wells Food Festival and a Greek pumpkin and feta pie – Zimaropitta

As you may have gathered from recent posts, I’m ever so slightly excited about the very first Wells Food Festival, which takes place this coming Sunday.

One of the many reasons I’m looking forward to this culinary extravaganza is the festival also marks the opening of a brand new foodie establishment in  Wells.

Locals might have been wondering what’s been happening to the Sun Inn over the last few weeks. The pub on Union Street has been closed a little while and is currently being refurbished and transformed into a Greek idyll. Just in time for the festival, the pub will reopen as The Greek Taverna at the Sun, and as a big fan of Greek food I for one cannot wait.

I lost no time in catching up with the Sun’s new owner, Olga, who will be running the pub with her brother Yianni, to find out more about their plans.

“It is very much a family business,” Olga explains. “We want our customers to feel like they have just been invited to our house for a meal. Our mother will be the main cook because of course no-one cooks like a Greek mum! We believe that food is not just about what you cook, but that it always tastes better when you can enjoy it in a friendly, relaxed environment.

“We will be serving authentic Greek home-cooked food, good wine, cakes, ‘real coffee’, cocktails, and all the drinks you’d expect to find in a pub,” Olga tells me. “The Sun Inn will still be a pub but it will also serve quality home-cooked food. Outside lunch and dinner times, we’ll also offer meze (a selection of small dishes) that people can have with their drink if they don’t wish to have a full meal.”

Olga’s mother had her own restaurant back in Greece for over seven years, while Olga and her brother Yianni have run a small boutique hotel together. They clearly have heaps of experience, but what brings them to Somerset?

“My brother and I have both lived on and off in Wells for some time,” says Olga. “My sister-in-law lives here with her family and this is how we first discovered Wells. We fell in love with the place. It is a very interesting, small city surrounded by amazing nature. What we like most about it is that people are so friendly and make you feel like part of the family. We have been refurbishing the pub for the last three weeks and during this time it is has been amazing how many people have offered to help us.”

How does Olga think Wells will respond to their Greek food? Why is she so keen to share Greek cuisine?

“We love Greek food, not just because we are Greek, but also because we believe it is simple, healthy and delicious,” replies Olga passionately. “We know that British people love Greek food but what they get most of the time in the UK is Greek food cooked in a British way. We will be cooking authentic Greek food using local ingredients; we believe food tastes better if ingredients are sourced locally. Somerset has many farms producing excellent fruit, vegetables, meat and dairy. To give you an example instead of buying sausages imported from Greece, we decided to give our traditional family recipe to one of the local sausage producers who will be making them just for us.

“Also the financial situation in Greece in the last few years has taught us a big lesson: supporting local businesses is the only way to keep the community ‘alive’.”

I asked Olga if she could give us a taste of the kind of food we can expect to find at the new Sun Inn, and she has very kindly provided her recipe for Zimaropitta.

“Because your blog is about lovely, tasty food that doesn’t take long to prepare, I thought we can make an easy pumpkin pie with feta cheese,” says Olga. “Simple, inexpensive ingredients you can mix together in one bowl and cook in the oven is my idea of healthy fast food. This is what this recipe’s all about. We used a marrow bought straight from the producer in Wells Market and local Somerset feta cheese from Queen Street Deli.

“I would serve it with some tzatziki (yoghurt garlic dip) and a green salad. You can replace the flour with any wheat-free variety for a gluten-free version.”

Zimaropitta – feta and pumpkin pie

1kg grated pumpkin (not any of the sweet varieties), marrow or courgette
3 eggs beaten
300g feta cheese, crumbled
250g milk
250g semolina
250g self-raising flour
150g cornmeal (optional)
salt to taste (if your feta is not salty)
a little water might be needed to bring the dough to a porridge like consistency

Preheat the oven to 180°C/gas mark 4.

The traditional Greek way of grating a pumpkin or a marrow is to cut it in half lengthways and use a spoon to scrape off the soft part  little by little. Of course, it might be easier just to cut it to pieces, peel and use a box grater.

Then mix all the ingredients in a bowl and add some water if you think it is needed. It should have a thick, porridge-like consistency before you pour it into a buttered ovenproof dish. Bake in a preheated oven for about 45 minutes to 1 hour.

“There you go,” says Olga. “A piece of… pie! And a great way to persuade children to eat pumpkin too.”

Wells Food Festival and double baked Cheddar cheese soufflés

Double baked Cheddar cheese souffles

Soufflés have something of a reputation for being a little on the tricky side. If any of the Master Chef contestants ever say they’re going to bake a souffle, there’s always a sharp intake of breath and concerned expressions. But really, they’re not all that hard to do. Admittedly this was only the second time I’ve ever attempted them but both times they’ve been a great success. So you see, if I can make them, anyone can.

I used a lovely local Cheddar cheese in these soufflés. Dan Holland who owns the Queen Street Deli in Wells recommended Montgomery Cheddar, which is handmade on Manor Farm in North Cadbury. It’s a traditional, unpasteurised Somerset Cheddar, matured for 12 months to give it a gorgeously deep, nutty flavour.

The Queen Street Deli is another local business taking part in the Wells Food Festival on Sunday 20 October. Dan is organising the cheese stand at the festival, which will highlight the fantastic wealth of Somerset cheeses we are lucky enough to have on our doorstep.  During the day, local cheese makers will take turns on the stall to share their knowledge and passion with visitors.  Dan is also selecting and sourcing the cheese for the Somerset Sunday Lunch in the town hall, which he describes as a great honour and a chance to showcase a few of his favourite and most popular cheeses.

Queen Street Deli

The Queen Street Deli is a small friendly shop, offering the best of local and continental food.  Dan opened it in 2008 when he decide to leave teaching maths at the local school and went for a complete career change, working with food – something that had been a bit of a dream for a while.

Despite the recession, he has managed to grow the business over the last five years, thanks to the support of his very loyal customers. “The greater percentage of our customer base is people who live in and around Wells, rather than tourists, which is great and hopefully means we are getting it mostly right!” Dan tells me. “Recently the opening of new supermarkets in Wells has created more challenging times but we are looking forward to a busy Christmas period and will be taking the usual orders for cheese, ham and hampers.”

I asked Dan what he thought this first Wells Food Festival means for the food and drink of Somerset.

“Hopefully it will reinforce and build on the reputation that Wells and Somerset already have as an area that produces and creates excellent artisan food and drink,” says Dan. ” It will certainly emphasise the diversity and range of quality products that we have all around us and be a real opportunity for the local businesses to promote themselves to a wide audience.”

So what are Dan’s personal favourites when it comes to Somerset’s food and drink?

“Obviously I have a slight bias towards cheese,” Dan replies. “We have some great Cheddars such from the likes of Barbers, Keens and Montgomery but I still think Westcombe is my fave.  I also really love the range of cheese produced by the Somerset Cheese Company in Ditcheat. Their Rainbows Gold is very popular in the deli at the moment; rich curd made with Channel Island cows milk then washed in Golden Chalice ale from Glastonbury.

“Beyond cheese I really like Mendip Moments Ice Cream and James Chocolates, two very local companies that produce interesting and tasty products that everyone loves. My latest top recommendation for eating out is Matt’s Kitchen in Bruton. There’s no menu as such – everyone eats what Matt is cooking that night, there’s a friendly, relaxed atmosphere and lovely food.”

Armed with a decent chunk of Montgomery Cheddar, I returned home all inspired to bake my soufflés to hopefully celebrate a true taste of Somerset. The recipe is based on one I found in Mary Berry’s New Aga Cookbook for Swiss Double Soufflés, substituting her Gruyère for the Cheddar. It’s a perfect dish to cook in the Aga, but don’t worry – instructions for conventional ovens are also included below.

As the name says, these soufflés are double baked: first in ramekins in a bain-marie, and then again in a the cream sauce. So it’s no great disaster if your soufflés flop a little, as the double baking means they won’t end up all puffed up anyway. But they still taste beautifully light and airy, albeit rather rich and luxurious at the same time. They made for the perfect Saturday lunch, served with crusty bread and a simple salad, and they went down well with the children too – despite them containing spinach, which is not Mia’s favourite vegetable.

Double baked Cheddar cheese soufflés

100g spinach, washed and finely shredded
300ml milk
40g butter
40g plain flour
salt and pepper
freshly grated nutmeg
50g mature Cheddar cheese
3 eggs, separated
butter for greasing

Topping
50g mature Cheddar cheese, grated
300ml double cream

If you’re using a conventional oven, preheat to 220°C/gas mark 7.

Place the spinach and milk in a pan and bring to the boil. Stir well, remove from the heat and leave to one side.

Melt the butter in a large pan. Remove from the heat and stir in the flour. Return to the heat and cook for a minute, stirring constantly. Add the spinach and milk, a bit at a time, and bring to a gentle boil, stirring all the time. Simmer to thicken the sauce. Remove from the heat and mix in the salt, pepper, a good grating of nutmeg, and Cheddar cheese. Once these are well mixed in, stir in the egg yolks.

In a large clean bowl, whisk the egg whites until stiff and then carefully fold into the sauce.

Generously butter six small ramekins and spoon in the souffle mixture. Place them in a small roasting tin and pour boiling water into the tin until it is halfway up the sides of the ramekins.

If you’re cooking in an Aga, place the bain-marie in the roasting oven on the grid shelf on the oven floor for 15-20 minutes. After 10 minutes of the cooking time, when the soufflés are a good golden brown colour, turn the tin around and slide in the cold plain shelf on the second set of runners. Cook until they are springy to the touch.

If you’re cooking in a conventional oven, simply place the bain-marie in the oven for 15-20 minutes and cook the soufflés until golden and are springy to the touch.

Remove from the oven and leave for 5-10 minutes in the ramekins to allow the soufflés to shrink back a little.

Butter a shallow ovenproof dish which is just big enough to take the soufflés without them touching. Sprinkle half the grated Cheddar onto the bottom of the dish.

Carefully remove the soufflés from the ramekins using a small palette knife and place in the ovenproof dish. Season the cream and pour over the soufflés. Sprinkle the remaining Cheddar on top and bake in the roasting oven if you’re using an Aga, this time without the cold plain shelf, or in your regular oven, for 15-20 minutes until the soufflés are golden brown.

Serve with bread and salad.

Posh macaroni cheese

I posted a recipe for my macaroni cheese a little while ago. It’s a firm family favourite in the Bangers & Mash household. But I also had to bring you this version. It’s not my recipe. It’s from the acclaimed Australian chef Neil Perry’s Rockpool Bar & Grill; a beautiful tome of a cookbook, as much a coffee table book as a practical guide for the kitchen. If I actually had a coffee table, this would certainly take pride of place on it.

I received the cookbook courtesy of Qantas, who as well as offering flights to Australia are passionate about spreading the word about Australian food. In addition to running restaurants in Sydney, Melbourne and Perth , Neil Perry is the chief consulting chef for Qantas.

The recipes in Rockpool Bar & Grill are more aspirational than every day; the kind of dishes I’d probably only attempt if I were cooking for a special dinner party. Not surprising though as the aim of the book is to show you how to create restaurant-style dishes at home. It’s impossible to stop your mouth from watering as you turn the pages, which also provide a behind-the-scenes account of life in the Rockpool restaurants, as well as stories about the producers and suppliers who inspire Neil Perry’s menus.

So while I was rather taken with dishes like scampi ceviche, Wagyu beef bolognese, octopus braised in red wine and strawberry tart with balsamic vinegar ice cream, it might be a little while before I work up to trying these at home, particularly as they’d probably blow my weekly food budget in one meal. Instead it was the Rockpool’s take on good old macaroni cheese I felt would go down well with my family. This is what Neil Perry says:

Pasta and cheese is the best combo. My daughter Josephine can polish one of these off for dinner any night of the week. I first started making this years ago. I loved going to America and having mac ‘n’ cheese, more often than not at steakhouses. I began with a recipe from a great friend and truly one of the world’s great chefs, Thomas Keller of The French Laundry and Per Se. If you start with that kind of pedigree, you’re going to end up with a great dish, and a great dish I did end up with. It’s a perfect marriage with a good steak but is equally at home with all of the other meats and poultry we serve at the restaurant. Use good cheese, really good quality hard Italian pasta and a smoky bacon. Your efforts will be well rewarded.

I was curious to see how different restaurant-style macaroni cheese would be from what we usually make. And I have to say it is very good. Very, very good actually. My husband and the girls wolfed it down greedily and it really does work well with a decent steak. We enjoyed ours with griddled sirloin and a simple salad instead of our usual Sunday roast, and it was a rather special meal indeed.

Oh, and there’s are some heavenly-looking lemon meringue cupcakes in there that I’m pretty sure I’ll be having a go at very soon too.

Neil Perry’s mac ‘n’ cheese

Serves 4 as a light meal or a side

400g dried macaroni
2 tbsp extra virgin olive oil
3 rashers smoked bacon, diced
500ml single cream
125g Cheddar cheese, grated
250g Gruyère cheese, grated
2 garlic cloves, crushed
1 tsp smoked sweet paprika
2 tsp Dijon mustard
sea salt and freshly ground black pepper
100g Parmesan cheese, grated
80g fresh breadcrumbs

Cook the macaroni in a large saucepan of boiling salted water until al dente. Drain and refresh in iced water. Drain again and place in a large bowl.

Heat the olive oil in a saucepan over a medium heat. Add the bacon and cook until golden. Drain on paper towel, then add to the macaroni.

Return the pan to the heat, add the cream, bring to the boil, then reduce the heat and simmer for 5 minutes or until thickened. Remove from the heat and gradually add the Cheddar and Gruyère, stirring until melted.

Combine the garlic, paprika and mustard to form a paste, then stir into the cream mixture. Season to taste with salt and pepper. Add to the macaroni mixture and stir through.

Heat a grill to high. Divide the mixture between individual heatproof bowls or a 1.5 litre capacity baking dish. Sprinkle over the Parmesan, then the breadcrumbs. Grill until the top is golden.

This is an exciting time of year for cooks; a time when so many special fruits and vegetables come into season for just a brief and tantalising spell. As with rhubarb and wild garlic, we are making the most of English asparagus and it features on our menus on almost a daily basis.

Generally I tend not to do too much to asparagus. I simply steam it and serve with a squeeze of lemon and melted butter or a soft poached egg. Our girls go crazy for it, especially when they can eat it with their fingers. But I do also enjoy asparagus in a simple tart, like this one, with ham and Parmesan. It’s incredibly easy to make, especially if you forget about making your own shortcrust pastry and buy in ready-made instead, and it’s just as good eaten cold the following day.

175g plain flour
salt
75g butter
250g asparagus
2 eggs and 2 egg yolks
200ml Greek yoghurt
50ml milk
100g Parmesan cheese
Salt and pepper
100g chopped ham

Preheat the oven to 190°C / gas mark 5.

To make the shortcrust pastry, sift the flour into a large mixing bowl with the salt. Using your finger tips, rub in the butter until it resembles soft breadcrumbs. Add enough cold water to make the mixture come together to form a firm dough. Cover with cling film and rest in the fridge for half an hour.

Lightly flour your work surface and roll out the pastry to line 9 inch well-buttered flan dish. Line the pastry with foil or baking paper and fill with baking beads or rice. Bake in the oven for about 10 minutes until the pastry just starts to turn golden. Remove the beads or rice and the foil, and brush the pastry with a little of the egg you’ll be using in the filling. Return to the oven for another 5 minutes so the egg seals the case. Allow to cool slightly while you prepare the filling.

Lightly steam or boil the asparagus until only just cooked; it should still have a little bite. Refresh in ice cold water to stop further cooking and to retain that beautiful green colour. Drain well.

Gently beat the eggs and the extra yolks (which give it that lovely vibrant yellow colour) and combine with the yoghurt, milk and Parmesan cheese. Season with salt and pepper.

Arrange the chopped ham and asparagus in the pastry case and pour over the cheesy egg mixture. Bake in the oven for 15 to 20 minutes until the filling is set and golden. Leave to cool a little and serve at room temperature with a simple salad.

Watercress and pistachio pesto

I was recently given a new hand mixer and so, naturally, the first thing I had to try it out on was homemade pesto.

Normally I’m a bit of a purist when it comes to pesto. I could eat basil and pine nut pesto every day and never tire of it. It brings back very fond memories of inter-railing around Europe with my best friend after our A-levels. The only food we could really cook in our basic hostel kitchens was pasta and pesto from a jar. Washed down with a cheap bottle of plonk, we couldn’t have been happier. And then we ate fresh pesto in Italy and we were happier still.

But as my husband isn’t much of  a pesto fan, I have started to experiment with different variations. Wild garlic pesto was a big hit last year and I look forward to picking some again from the local hedgerows when spring finally decides to turn up here in Somerset.

One of my favourite food bloggers is Louisa at Chez Foti who happens to be a bit of a pesto aficionado. I love the look of her stilton, walnut and parsley pesto and will be trying it soon. In this same blog post Louisa helpfully listed a whole menu of ideas for anyone wanting to dabble in a little pesto experimentation.

One of her suggestions was watercress, which is a particular favourite ingredient of mine. And so I came up with this recipe for watercress and pistachio pesto. I thought it might be a little peppery for the children but that wasn’t an issue at all. They wolfed it down and came back for more. A definite success. Bear in mind that if you do add the Ricotta at the end, you’ll need to use the pesto within a couple of days. If you leave it out, the pesto will keep in a glass jar in the fridge for a couple of weeks.

Watercress and pistachio pesto

Serves 6 to 8

80g watercress
1tsp rock salt
3 cloves of garlic, peeled
60g Parmesan, grated
60g shelled pistachio nuts
150 ml olive oil – the best quality you can afford
2 tbsp Ricotta cheese

In a blender, process the watercress, salt, and garlic until well chopped. Add the Parmesan, pistachio nuts and olive oil and blend until fairly smooth and creamy.

Scrape into a bowl and fold in the Ricotta cheese. Serve with pasta of your choice. Personally I always go for spaghetti with pesto.

Round Up: March’s Recipes for Life Challenge

Beetroot, carrots and cheese. Those were the three ingredients selected by the cookery club at SWALLOW for this month’s Recipes for Life challenge. And they did indeed present quite a challenge.

But I should have known I could rely on you food bloggers to deliver the goods. We received a surprisingly diverse range of recipes this month, showing just how versatile these humble ingredients can be…

Sarah from The Garden Deli got the ball rolling with this sumptuous Carrot and Beetroot Soup with Cheesy Croutons. Featuring garlic and cumin, this beautiful soup is a proper winter warmer and I love the croutons for dunking topped with one of my favourite cheeses, Wensleydale.

I experimented with some Beetroot and Carrot Pancakes for my first entry and, while they tasted pretty good – particularly with the herby mascarpone on the side – I was a bit disappointed the pancakes didn’t turn out pink like the batter!

Last month’s challenge winner, Chez Foti came up with this fantastic Roasted Roots and an Easy Roasted Roots Pizza. Louisa’s dish brings together sensational seasonal roasted root vegetables on top of a quick and easy wholemeal scone pizza base, not forgetting lots of lovely mozzarella. Yum!

Helen from The Crazy Kitchen really did go crazy with not one, not two, but three entries for Recipes for Life. Anyone who was stumped by the three set ingredients this month – look and learn! First up were these incredible Baked Cheesy Meatballs with Beetroot Sauce. Now don’t they look good? And a crafty way to sneak vegetables into unsuspecting children…

Another fiendishly clever way of disguising veggies comes in this gorgeous Two-of-your-five-a-day Chocolate Cake – the second entry from Helen at The Crazy Kitchen. “It’s sooooo good!” was the verdict of Helen’s 10-year-old, beetroot-hating daughter! Say no more!


There’s been a lot of talk on Twitter and food blogs recently about the 5:2 diet. So much so, my husband and I are both giving it a go. This Beetroot, Carrot and Cottage Cheese Salad, the final entry from The Crazy Kitchen’s Helen would definitely make a delicious lunch for a 5:2 fasting day and I plan to give it a try very soon.

I love the look of this Roasted Vegetable and Goat’s Cheese Risotto from Under The Blue Gum Tree. It sounds so simple to make but you just know it’s going to be absolutely packed full of flavour, with the gorgeous creaminess of the goat’s cheese a perfect partner for the earthiness of the root vegetables.

I wish I could bring you pictures of this Beetroot, Carrot and Goat’s Cheese Tatin from Martin at The Tempest Arms as it sounds simply divine and should look stunning. But I promise to make it very, very soon and I will post photos when I do.

Meeting the lovely Choclette from Chocolate Log Blog was one of my highlights from the Bristol Blog Summit earlier this month, which also gave me the perfect opportunity to persuade her to enter Recipes for Life. She promised she’d try, and I was very pleased to see she was true to her word with these ingenious Beetroot, Carrot and Goat’s Cheese Muffins. As with all Choclette’s recipes, there’s some chocolate in there, as well as a little kick from a touch of cayenne pepper. I look forward to trying them out.

This is a dish we eat quite a lot in our house, so I just had to enter it – my Beetroot, Carrot and Feta Cheese Salad. It’s ever so simple and ever so tasty, and a great way to create a summery-feeling salad with winter vegetables.

The final entry came in at the very last minute but I was so glad to see it – a Carrot and Beetroot Cake with a Cream Cheese Topping from Lucy at The Bell Inn. Again I sadly don’t have photos of this one but when you read the recipe you just know it’s going to taste good and I absolutely adore beetroot and carrot in cakes. Another one to try very soon.

But of course, what you’re waiting to hear is who did the SWALLOW cookery club choose as this month’s winner? Well, Lucy at The Bell Inn came a very close second with her Carrot and Beetroot Cake but first place goes to… Helen from the Crazy Kitchen for her scrumptious Baked Cheesy Meatballs with Beetroot Sauce. The group said they particularly liked the sound of the oozy cheese in the middle of the meatballs. Me too!

Beetroot, carrot and feta cheese salad

Today is the last day to enter the March Recipes for Life challenge. So if you’re sitting on a delicious dish featuring beetroot, carrot and cheese – well, I hope not literally as that could get a little messy – then today is the day to let me know about it! Details of how to enter this month’s challenge are here.

For my last-minute entry, I bring you a fresh and zingy salad – one that we eat regularly in the Bangers & Mash house, or variations of it at least. It’s a surprisingly summery salad considering its winter root vegetable ingredients. This version uses of course beetroot and carrot, but you could also try it with turnip, swede, celeriac or any kind of red or green cabbage. It’s based on an Ottolenghi recipe and I love it for its versatility and its slightly sweet and sour dressing which is just mouth-wateringly tasty.

As I made it at the weekend for Recipes for Life, I tried it with some feta cheese this time. It worked extremely well – the soft tanginess of the feta is a perfect contrast to the earthiness of the beetroot and parsley. You can use whichever herbs take your fancy. The original recipe used parsley and dill but I went with parsley and coriander, simply because those are what I had in the fridge. It also features capers but you could leave these out if you don’t have or like them, or perhaps use olives or chopped gherkins instead. I left out the dried sour cherries from Ottolenghi’s version; sometimes I’ll use another dried fruit instead or chopped apple. But not this time, as I thought there was probably enough going on. Go experiment!

By the way, I use organic vegetables so I don’t bother to peel them for salads like these. But if you’re not sure what your veggies have been grown in, it might be best to peel them first.

Beetroot, carrot and feta cheese salad

Serves 4 to 6

3-4 medium beetroots, scrubbed and grated
3 large carrots, scrubbed and grated
large handful of fresh coriander, roughly chopped
large handful of fresh parsley, roughly chopped
200g feta cheese, cut into small cubes
30g capers
2 tbsp lemon juice
1 tsp cider vinegar
2 tbsp sunflower oil
2 tbsp olive oil
2 tsp wholegrain mustard
1 tsp sugar
1 clove garlic, crushed
salt and pepper to taste

This is so simple. Place the grated beetroot and carrot in a large mixing bowl with all the other ingredients (keep back a few pieces of cheese to place on top at the end) and mix together well using your hands. Ottolenghi describes it as ‘massaging’ the ingredients, so that the vegetables get the chance to absorb all the delicious flavours.

Leave the salad in the fridge for at least an hour before serving, when you can throw in the last few pieces of brilliantly white feta, which I think look fabulous alongside the pink pieces.

This salad will keep in the fridge for a couple of days. I think it tastes even better the next day. I like to eat mine in a tortilla wrap with hummus and cold meats. How will you eat yours?

Beetroot and carrot pancakes with herby mascarpone

What is it about pancakes that makes them just so popular? Whenever I announce to my brood that pancakes are on the menu, there are always shrieks of excitement. They don’t seem to care either what the pancakes are made from, so if you’re finding it tricky to get certain foodstuffs, such as beetroot, into your youngsters, pancakes could be the ideal way to sneak it past them.

These pancakes are made from beetroot and carrot, although I’m sure if you did a blind taste test no-one would be able to guess. They simply taste good in a savoury, wholesome kind of way. I was rather hopeful the final pancakes would be pink like the batter. My girls would have loved that. But unfortunately the colour changed as the pancakes fried. Perhaps if you use only beetroot you end up with a stronger colour? I need to experiment some more, I think.

I came up with these pancakes as my entry for this month’s Recipes for Life challenge. The three set ingredients for March, you see, are beetroot, carrot and cheese. So the beetroot and carrot are in the pancakes, while the cheese comes in the form of Italian mascarpone cheese combined with Greek yoghurt, lemon juice and lots of fresh herbs for a very delicious topping.

I’m running the Recipes for Life challenge in partnership with Somerset charity SWALLOW which works with adult with learning difficulties. Over a six month period we’re challenging food bloggers to come up with a whole host of tasty, healthy and easy-to-cook dishes and the best of these will appear in a new cookbook to raise money for the charity. Beetroot and carrot pancakes with herby mascarpone

Serves 4 to 6

250g self-raising flour
50g beetroot, scrubbed and grated
50g carrot, scrubbed and grated
2 tsp bicarbonate of soda
salt and pepper
2 eggs
90g melted butter
420g milk
vegetable oil for frying
200g mascarpone cheese
200g Greek-style yoghurt
2 tbsp lemon juice
large handfuls of fresh parsley and mint (or whatever herbs you fancy), roughly chopped

For the pancake batter, put the flour, beetroot, carrot, bicarbonate of soda and a generous grind of both salt and pepper in a large bowl and mix together well.

Gently beat the eggs in a separate bowl and then add the melted butter and milk and mix. Add this to the beetroot and carrot mixture and stir until everything is well combined.

Heat a spot of oil in a heavy-based non-stick frying pan. When it’s hot, drop in spoonfuls of the batter and cook your pancakes for a minute on each side. Keep your pancakes warm in the oven until you’ve worked through all the batter.

To make the herby topping, simply put the mascarpone and yoghurt in a bowl with the lemon juice and throw in the chopped herbs. Mix it all together and season to taste.

Serve your pancakes with a good dollop of the herby mascarpone on top.
