I’m loving this extended summer we’re having here in Somerset, particularly as it means we can continue having barbecues. In fact we enjoyed a teatime barbecue just yesterday when the children got home from school.
And so I don’t feel too bad about having taken so long to bring you this round-up of delicious beach barbecue recipes from August’s The Spice Trail challenge. I’m hoping there’s still time to enjoy a fair few of these dishes al fresco before the weather turns and autumn proper sets in…
We start the round-up with a taste of the Caribbean from Mad Avocado with this tasty Jerk Chicken (1) from Mad Avocado. Flavoured with an array of spices and zingy citrus juices, this is most definitely finger lickin’ good food!
From the Caribbean to Sri Lanka next as Shaheen from Allotment 2 Kitchen serves up her splendid Chilli Coconut Runner Bean Pie (2). We have heaps of runner beans from the garden in the freezer and this looks like the perfect recipe to use them in.
Sarah from Tales from the Kitchen Shed describes her Chicken Kebabs (3) as ‘takeaway-style’ but they look so much better than anything you’d find down your local kebab shop, if you ask me.
More kebabs up next with these very tempting Chipotle Chicken Kebabs with Avocado Cream Sauce (4) from Jennifer at A Girl Eats World. I love the sound of that avocado sauce.
And don’t these Middle Eastern Spiced Camp Fire Chickpeas (5) from Elizabeth’s Kitchen Diary look simply glorious? I can practically smell the spices and wood smoke from here…
With a hefty harvest of courgettes from our veg patch this year, this Grilled Salad of Courgette, Chicory, Basil and Mozzarella (6) has become a favourite dish of ours throughout the summer. It’s an extremely satisfying salad, full of flavourful, juicy vegetables and savoury, salty cheese and olives.
Linzi from Lancashire Food serves up another delicious salad next in the form of her French Bean, Tomato & Cumin Salad (7). It’s perfect warm or cold, served on its own or to accompany grilled steak or chicken. I can imagine getting through several helpings of this one!
The summer salads keep coming. Choclette from Chocolate Log Blog has created this sensational Spiced Roasted Summer Vegetable Salad with Millet, Peas and Lentils (8). As with all her recipes, this features chocolate too – this time in an intriguing chocolate balsamic in which the vegetables are roasted. I have to get hold of some of that!
Helen from Family-Friends-Food has rustled up a Garden Tomato Salad with Olives, Greek Basil & Sumac (9). It might be simple to make but it’s super tasty, especially with all those gorgeously juicy, homegrown tomatoes.
India meets the Mediterranean in these attractive Tomato and Nigella Seed Bread Rolls (10) from Corina at Searching for Spice. They are such a pretty colour and I love the flavour combinations.
Low-fat and tasty as well as quick and easy to make, these Sweet Chilli Turkey Burgers (11) from Caroline Makes are a great alternative to the usual beef burgers on your barbecue.
And if you’re looking for a relish to serve with your barbecued meats, how about some of my zingy Mexican Salsa Verde with Tomatillos and Pineapple (12)?
I played around with a much-loved Nigella Lawson recipe, substituting the aubergine to come up with this very moreish Griddled Squash with Feta, Mint and Chilli (13). They’re perfect for barbecues and party nibbles.
We only had one sweet dish entered this month, but as Helen from Family-Friends-Food describes her Nobbly Bobbly Spiced Chocolate Biscoff Fruit & Nut Crispy Cake Bites (14) as somewhat ‘intense’ I think one each will be plenty so there’s enough to go round! They are a lovely take on the classic rice crispy cakes we all learn to make at some point in our childhoods, featuring spices, dried fruit and nuts, caramelised biscuit spread and, of course, lots of chocolate. Do you know what, I think I could probably manage a couple…
And the winner is…
It was a very tough call but the winner of this month’s prize, a copy of Nigella Lawson’s Nigella Summer, has to go to Elizabeth from Elizabeth’s Kitchen for her incredible Middle Eastern Spiced Camp Fire Chickpeas. If there were any dish just perfect for a beach barbecue, it has to be this one.
